My World!

Vietnamese Roti Chicken *****

Marinade:
2-3 lbs. chicken (5 chicken thighs)
3 garlic gloves minced
2 tbsp. fish sauce
2 tbsp. soy sauce
2 tbsp. sugar or (1 tbsp. sugar + 1 tbsp. honey)
1 tsp. Chinese Five Spice
Black pepper
Coco Soda or Coconut Water
Roasted sesame seeds

Caramel:
2 tbsp. oil
2 tbsp. sugar

Caramelize oil and sugar on low heat.
Add chicken (skin sides down), After chicken is golden, add the remaining marinade.
Add 1/4 Coco Soda or coconut water. Simmer uncover. Add more as needed until chicken is cooked.
Let the soda reduced to very little sauce.
Sprinkle some toasted sesame seeds.
Done.

Serve with rice, and vegetable.
