My World!

Banana Tea Bread *****

  • ½ c. butter
  • 1 1/3  c. sugar
  • 2 eggs
  • ¼ c. sour cream
  • 2c. sifted flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 c. mashed ripe bananas (3 med.)
  • 2 tsp. rum or vanilla or almond extract
  • 1 tsp. almond extract
  • 1 ½ c. chopped pecans or walnuts

Cream butter + sugar.  Add eggs + sour cream. Shift flour, baking powder, baking soda and salt together. Add flour mixture alternately with mashed bananas.  Add almond extract. Stir in pecans.

Turn into greased 9*5 or five 5*3 inch loaf pans.  Bake 350 degrees for 40 (mini) or 60-70 minutes.

Remove from pan. Cool. Before serving, lightly sift confectioner sugar over top of bread.
